Instructions
For the Mint Simple Syrup:
- Set a small saucepot over high heat. Add the water and sugar to the pot. Stir and bring to a boil. Once boiling, stir, then remove from heat. Add the mint leaves and allow the simple syrup to steep and cool for 30 minutes. You can choose to leave-in or strain-out out the mint leaves. I like to keep them in because they have a softer texture than fresh mint leaves. No muddling required!
To Make a Pitcher of Mojitos:
- Set out a large pitcher. Pour in the rum, mint simple syrup, and lime juice. Stir to combine.
- When ready to serve, stir in the club soda and fill the pitcher with ice.
- Garnish glasses with fresh mint leaves and lime rounds or wedges. Pour the mojito into glasses and serve.
Notes
- Feel free to substitute white rum with vodka to make a refreshing pitcher of vodka mojitos.
- To make a pitcher of virgin mojitos, use sparkling soda, ginger ale, or more club soda in place of the rum.
- Try adding fresh sliced strawberries or coconut cream!
