Description

- 1 cup butter room temperature
- 2 cup brown sugar packed
- 2 egg room temperature
- 2 teaspoon vanilla
- ½ cup molasses
- 4 ½ cup all-purpose flour
- 4 teaspoon baking soda
- 1 teaspoon salt
- 1 Tablespoon ginger
- 2 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ cup white sugar for rolling
- white chocolate chips optional, for drizzle, melted
Instructions
- In a large bowl beat together butter, sugar, eggs, vanilla and molasses. In another bowl combine the flour, baking soda, salt, ginger, cinnamon and nutmeg. Slowly beat into the wet mixture until combined.
- Chill dough for 1 hour and up to 24 hours.
- When ready to use dough preheat oven to 350 degrees Fahrenheit.
- Remove chilled dough from refrigerator and roll dough into small balls, about 1'' each, and roll in sugar.
- Place dough baking sheets lined with parchment paper and bake in preheated oven at 350 degrees F. for about 10 minutes. You want to bake them just until the tops start to crack. Remove from oven and let cool for 2 minutes on baking sheet. Then remove them from baking sheet to wire rack and let cool completely.
- After they are cooled you can drizzle them with white chocolate if desired. Place white chocolate in a microwave safe bowl, heat according to directions on package and drizzle cookies.

- Store cookies in an airtight container at room temperature for up to 4 days to maintain freshness.
- For longer storage, freeze cookies in an airtight container for up to 3 months without loss of flavor or texture.
- Drizzle white chocolate only after cookies have fully cooled to avoid melting or smearing.
