  • 3/4 cup butter softened, unsalted
  • 1/2 cup brown sugar , packed
  • 1/2 cup sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon cloves ground
  • 1 teaspoon ground ginger
  • 1/2 cup sanding sugar coarse

Instructions

  1. To your stand mixer add the butter, brown sugar, sugar and egg on medium speed until smooth.
  2. Add in the molasses until fully mixed in, about 30 seconds.
  3. Sift the flour, baking soda, salt, cinnamon, cloves and ginger, then add it into the stand mixer on low speed until just combined.
  4. Cover bowl with plastic wrap and refrigerate for 1 hour.
  5. Preheat the oven to 375 degrees.
  6. Roll 2 tablespoon sized scoops of dough in coarse sanding sugar and place on cookie sheets at least 2 inches apart.
  7. Bake for 10-12 minutes until the tops are cracked then cool for 5 minutes before removing gently from cookie sheets.
