Molten Chocolate Mug Cake

This Molten Chocolate Mug Cake offers a rich, individual dessert featuring a soft, lightly cocoa-flavored cake with a molten chocolate center. Made in microwave-safe mugs, it combines melted bittersweet chocolate with a mix of sugar, eggs, cocoa powder, and leavening to achieve a delicate and tender crumb that holds a warm molten core. The method involves microwaving at reduced power to maintain the gooey center while cooking the cake through, making it a practical choice for a quick yet indulgent treat.

Description

Molten Chocolate Mug Cake prepares two single-serving cakes combining butter, bittersweet chocolate, sugar, eggs, cocoa powder, and a leavening agent. The melted butter and chocolate form a rich base for the batter, balanced by cocoa and vanilla for flavor and a slight salt note to enhance the sweetness. The batter is microwaved at 50% power in two mugs in stages to ensure the cakes bake evenly but retain a molten core from the chocolate pieces nestled inside.

The result is a moist, tender cake with a contrasting soft center of melted chocolate that pulls slightly from the mug's edge when done. Unlike baking a full cake, the microwave method provides speed and convenience, ideal for an immediate dessert without oven use.

When serving, allow the cakes to rest briefly to settle and avoid burning your mouth on the molten center. This dessert works well as a personal sweet ending for two or to share with a loved one.

Careful flour measurement is important to maintain the soft texture and prevent dryness. Adjust microwave times depending on power, with lower power promoting the molten center effect.

Ingredients

Servings
  • 1/4 cup butter
  • 1 ounce bittersweet chocolate chopped
  • 1/4 cup granulated sugar
  • 2 egg large
  • 2 tablespoons cocoa powder unsweetened
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 ounce bittersweet chocolate in 4 pieces, or semisweet chocolate

Instructions

  1. Microwave butter and chocolate in a large microwave-safe bowl at 50% power³ until melted, about 1 minute.
  2. Stir in sugar, eggs, cocoa, vanilla, and salt.
  3. Add flour and baking powder, and whisk in.
  4. Divide the batter between 2 12-16 ounce⁴ microwave-safe mugs.
  5. Place mugs on microwave turntable.
  6. Microwave at 50% power for 45 seconds.
  7. Stir batter and microwave for another 45 seconds at 50% power.
  8. Press 2 pieces of chocolate into the center of each cake. No need to press down. They should sink in on their own.
  9. Microwave at 50% power for 60-90 seconds.
  10. Cake should pull away from the edge of the mug when done.
  11. Let sit 2 minutes before serving.

Notes

  • Measure flour accurately by weighing or lightly spooning and leveling to avoid dense or dry cake texture.
  • Use 50% microwave power to preserve molten chocolate center; full power cooks faster but melts chocolate into the cake.
  • Use at least 12-ounce mugs to prevent overflow during microwaving.
  • Adjust cooking times according to your microwave wattage for best results.
  • Semisweet chocolate can substitute for bittersweet.
