Description
This dessert begins by combining melted butter and semi-sweet chocolate with sugar, then whisking in eggs and egg yolks for structure and richness. A small amount of flour is folded in to form a batter that bakes in individual custard cups coated with cooking spray. Baking at 425°F for roughly 13 to 15 minutes ensures the edges become firm while the center remains soft and molten, creating the signature lava effect when cut or bitten into.
After a brief rest outside the oven, the cakes are served warm, commonly paired with vanilla ice cream for contrast between warm chocolate and cold creaminess.
These cakes can be made ahead by preparing the batter two days in advance and thawing to room temperature before baking. Additionally, the baked cakes freeze well for up to three months and can be gently reheated without losing their molten core.
Ingredients
- 4 oz semi-sweet chocolate or just use 4 oz chocolate chips, about 1/2 cup, baking squares
- 1/2 cup butter melted
- 1 cup powdered sugar
- 2 egg
- 2 egg yolk
- 6 tbsp flour
Instructions
- Preheat oven to 425° F. Spray 4 custard cups with non-stick cooking spray and place on a baking sheet.
- In a microwave-safe bowl, melt butter and chocolate until butter is melted. Stir until chocolate is melted. Stir in sugar until well blended. Whisk in eggs and egg yolks. Stir in flour. Divide evenly between baking dishes.
- Bake 13-15 minutes until sides are firm and center is soft. Let stand 1 minute before removing. Serve warm with ice cream.
