Description
Mongolian Beef and Broccoli with Noodles combines marinated slices of beef with crisp broccoli florets in a rich sauce incorporating soy sauce, brown sugar, garlic, sriracha, hoisin sauce, and rice vinegar. The dish begins with sautéing the beef until browned, then the broccoli is added to retain some crunch. A cornstarch slurry thickens the sauce after it has been boiled to concentrate flavors. Finally, cooked ramen noodles are folded in to absorb the thick sauce, unifying the elements. Garnished with green onion, the dish has a balance of sweet, salty, and mildly spicy notes with contrasting textures from tender meat, crisp vegetable, and slippery noodles.
This stir fry serves as a complete meal by itself, great for a nostalgic Asian-inspired dinner that uses common pantry staples. It pairs well with simple sides like steamed rice or a light cucumber salad.

Ingredients
- ⅔ cup soy sauce (I used low sodium)
- ½ cup water
- ½ cup brown sugar
- 2 teaspoons garlic minced
- 1 teaspoon sriracha
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 3 tablespoons water cold; plus 2 teaspoons corn starch
- 2 cups broccoli florets
- 2 tablespoons neutral cooking oil I used sesame oil, generic cooking oil
- 1 ½ pounds beef or very thin sliced steak, for stir fry
- 2 ramen noodles boiled til tender and drained, packages
- green onion for garnish, chopped
Instructions
- Whisk together soy sauce, water, brown sugar, garlic, sriracha, hoisin, and rice vinegar. Set aside.
- Heat oil in a large skillet over medium-high heat. Saute beef/steak in the oil for 5-6 minutes. Add broccoli and saute 3-4 minutes longer.
- Stir together cold water and corn starch til dissolved.
- Add sauce and bring to a boil. Stir in corn starch slurry til thickened. Reduce heat to low.
- Stir in noodles. Garnish with green onions if desired and serve.
