Monster Cookie Bars Recipe

Monster Cookie Bars are rich, chewy bars made from oats, flour, brown sugar, peanut butter, and butter, layered with a melted chocolate and peanut butter topping, sprinkled with M&M's. They combine a soft, oat-based texture with a sweet, chocolate-peanut butter layer and candy pieces for crunch and color.

Description

This recipe starts with a mixture of quick oats, all-purpose flour, brown sugar, salt, softened butter, and peanut butter. Part of this mixture is pressed into a greased pan to form a base layer. A chocolate mixture of sweetened condensed milk, milk chocolate chips, and peanut butter is melted and spread over the base layer. The reserved oat mixture is sprinkled on top, followed by a layer of M&M's for added texture and sweetness.

Baking the bars yields a firm yet tender oat layer with a chocolaty, peanut butter rich topping that holds everything together. The M&M's add a colorful crunch on top.

After baking for about 25–27 minutes and cooling completely, the bars can be cut into squares. These bars make a filling treat suitable for dessert or snacks.

  • 1 1/2 c quick oats
  • 1 1/2 c all-purpose flour
  • 1 c brown sugar
  • 1 tsp salt
  • 3/4 c butter softened
  • 1/4 c peanut butter creamy
  • 14 oz sweetened condensed milk
  • 1 bag milk chocolate chips
  • 1/4 c peanut butter creamy
  • 1 c M&M's

Instructions

  1. Preheat the oven to 350 degrees F and grease a 9x13 inch baking pan.
  2. Add the oats, flour, brown sugar, salt, softened butter, and 1/4 c peanut butter to a medium size bowl and stir together with a spoon.
  3. Once the ingredients have been combined remove 1 cup and set it aside. Add the remaining mixture from the mixing bowl to the greased baking pan and press.
  4. Add the condensed milk, chocolate chips and 1/4 c of peanut butter to a saucepan and melt over medium-low heat. Stir constantly until the chocolate has melted and all the ingredients have incorporated together.
  5. Pour the melted chocolate mixture on top of the mixture that was pressed into the baking pan, Use a cooking spatula to spread it evenly.
  6. Take the 1 cup of the oat mixture that you set aside earlier and sprinkle it evenly over the top of the chocolate layer.
  7. Top with M&M's and bake for 25-27 minutes. Once done allow the cookie bars to cool completely before cutting them.
