Moroccan Marinade for Beef Kebabs

This Middle Eastern inspired marinade is perfect for beef or lamb. For chicken, substitute lemon juice for the red wine vinegar and reduce the time in the marinade to 30 minutes, or up to 2 hours.

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon Turmeric
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cumin ground
  • 1/2 teaspoon cloves ground
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper ground
  • 3 cloves garlic minced
  • 3 tablespoons red wine vinegar
  • 1 1/2 lbs. top sirloin cut into chunks
  • 1/2 purple onion cut into wedges
  • 1 red bell pepper cut into wedges

Instructions

  1. Mix all marinade ingredients together in a large bowl. Toss in beef chunks. Marinate several hours or over-night.
  2. Thread on skewers alternating with chunks of peppers and onions. grill 3 or 4 minutes per side depending on thickness of meat for medium rare.
