  • olive oil cooking spray or 2 teaspoon
  • 1 onion peeled and finely chopped
  • ½ teaspoon garlic minced
  • ½ teaspoon ginger minced
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon cumin ground
  • 1/2 teaspoon smoked paprika
  • 2.5 cups apple juice 625ml
  • 14 oz chickpea 400 g tin, rinsed and drained
  • ½ cup dried apricot halved, soft, ready-to-eat, 100 g
  • 2 cups turkey shredded leftover, or chicken if you prefer, 250 g
  • 1 cilantro fresh coriander, small bunch, chopped
  • 4 tablespoon almonds flaked

Instructions

  1. Heat the oil in casserole dish and sauté the onions for 5 mins until softer,
  2. Add in the garlic, ginger, cinnamon, cumin and paprika and stir for 30 seconds until fragrant.
  3. Then add in the apple juice, chickpeas and apricots, bring to the boil and then reduce to a roiling simmer and cook for 10 mins .
  4. Add in the leftover turkey and cook for a further couple of mins until the turkey is warmed through.
  5. Switch off the heat, sprinkle on the cilantro and almonds and serve.

Notes

  • This stew contains 5 Freestyle Points per serving on Weight Watchers.
  • Chicken can be used instead of turkey if preferred.
  • Use unsweetened apple juice to avoid added sugars.
  • Half the apple juice may be substituted with chicken stock for a different flavor profile.
