Moroccan Turkey Stew Recipe
Description
The Moroccan Turkey Stew Recipe starts by sautéing onions in olive oil until softened, then adding a blend of spices including ground cinnamon, cumin, and smoked paprika to release their aromas. Apple juice provides a sweet and fruity cooking liquid combined with chickpeas and dried apricots, creating a simmered base rich in both sweetness and spice.
Leftover shredded turkey is stirred in at the end to warm through without overcooking, preserving the meat’s texture. The stew is finished with fresh cilantro for herbaceous notes and flaked almonds to add a toasted crunch, providing contrast in texture.
This stew is hearty and subtly spiced, suitable as a warming main dish with a balance of fruity sweetness from apricots and apple juice with savory and earthy turkey and chickpeas. It can be a practical way to use leftover turkey with North African-inspired flavors. The dish pairs well with rice, couscous, or flatbreads.
Tips in the notes suggest substituting chicken for turkey, using unsweetened apple juice, and adjusting quantities for larger groups. Using medium heat during simmering preserves ingredient textures.
