Mortadella, Burrata & Pesto Focaccia Sandwich

This sandwich layers creamy burrata cheese, savory mortadella slices, fresh tomato, and peppery arugula atop focaccia bread spread with pesto, olive oil, and a drizzle of balsamic cream. The combination creates a rich and balanced sandwich featuring soft mozzarella texture, herbaceous pesto, and the gentle tang of balsamic, finished with seasoning of salt and black pepper. Cut into four portions, it offers a satisfying Italian-inspired meal or snack.

Description

The Mortadella, Burrata & Pesto Focaccia Sandwich is assembled by horizontally slicing focaccia bread, then spreading torn burrata mozzarella evenly over the surface for a creamy base. Basil pesto adds an aromatic, herbaceous layer that complements the mild cheese. Slices of mortadella, an Italian cured meat, are placed atop along with fresh tomato slices and peppery arugula leaves, contributing freshness and texture.

Extra virgin olive oil is drizzled to enhance moisture and flavor, and the sandwich is seasoned with salt, black pepper, and a drizzle of balsamic cream for a slightly sweet, tangy finish. The sandwich is closed with the focaccia top, then cut into four pieces for sharing or convenient serving. The combination balances soft and firm textures, delicate creaminess, and savory notes representing Italian deli flavors.

Chef’s tips suggest that sliced mozzarella can substitute for burrata and arugula pesto can be used instead of basil pesto if preferred, providing flexibility in ingredients based on availability without significantly changing the character of the sandwich.

Ingredients

Servings
  • 1 focaccia bread
  • 10 lices mortadella
  • 2 burrata mozzarella
  • 3 tbsp pesto
  • 1 tomato sliced, large
  • arugula
  • balsamic cream (balsamic vinaigrette or reduced balsamic can also be used)
  • extra virgin olive oil
  • salt
  • black pepper

Instructions

  1. Cut the focaccia horizontally in half.
  2. Break the mozzarella with your hands and spread it over the whole surface of the bread.
  3. Spread the pesto with a spoon, then place the slices of mortadella, tomato, arugula, olive oil, salt, pepper and balsamic cream.
  4. Place the other half of the focaccia on top, cut into 4 and serve.

Notes

  • If burrata is unavailable, sliced mozzarella is an acceptable substitute for a creamy cheese layer.
  • For a different flavor profile, switch basil pesto with arugula pesto according to preference.
