Mozzarella Sticks
Description
This recipe uses string cheese cut in half, dipped sequentially into flour, eggs, and seasoned Italian breadcrumbs twice to build a thick breading that crisps perfectly during frying. Freezing the coated sticks for at least two hours before frying is essential to prevent the cheese from melting too quickly and leaking into the oil. The mozzarella inside becomes soft and melty while the exterior turns a golden brown crisp.
The seasoning in the breadcrumb mix with salt, pepper, and herbs adds savory flavor to contrast the mellow cheese. Using a frying thermometer ensures the oil maintains the correct 350°F temperature to avoid greasy or burnt sticks.
After frying, the sticks are drained and sprinkled with fresh parsley for a touch of color and freshness then paired with warm marinara sauce for dipping, complementing the cheese's flavor and texture nicely.
The uniform size of string cheese pieces helps each cook evenly, yielding consistent results every time.
Ingredients
- 16 string cheese cut in half crosswise
- 1/3 cup all-purpose flour
- 1 1/2 cups Italian-style breadcrumbs
- salt to taste
- black pepper to taste
- 2 egg
- 2 teaspoons milk
- cooking oil for frying
- 2 tablespoons parsley chopped
- 1 cup marinara sauce
Instructions
- Place the flour in a small bowl. Place the breadcrumbs, salt and pepper in a second bowl and stir to combine.
- Place the eggs and milk in a third bowl and beat until well mixed.
- Dip each piece of cheese into flour, then into the egg, then the breadcrumbs, then the egg again, then the breadcrumbs again. Place each finished cheese stick on a sheet pan lined with parchment.
- Repeat the process until all the cheese has been coated.
- Freeze the cheese for at least 2 hours or until frozen solid.
- Heat 3 inches of oil in a deep pot to 350 degrees F.
- Place a few cheese sticks at a time into the oil. Cook for 2-3 minutes or until just golden brown.
- Drain the cheese sticks on a paper towel. Sprinkle with parsley and serve with marinara sauce.
Notes
- String cheese provides uniform size and even cooking; alternatively, cut mozzarella blocks into sticks of similar size.
- If Italian-style breadcrumbs are unavailable, mix regular breadcrumbs with dried Italian seasoning.
- Maintain oil temperature at 350°F using a thermometer to prevent oily or burnt crust.
- Freezing cheese sticks before frying is crucial to keep the cheese from melting out during cooking.
