  • 300 grams all-purpose flour 2 1/2 cups
  • 3 grams salt 1/2 teaspoon
  • 3 grams baking soda 1/2 teaspoon
  • 200 grams brown sugar 200 grams
  • 100 grams egg 2 large eggs
  • 5 grams vanilla extract 5 grams
  • 225 grams butter 2 sticks or 1 cup, softened, unsalted
  • 9 grams cinnamon 3 teaspoons, powder

  • 70 grams sugar 1/3 cup
  • 9 grams cinnamon 3 teaspoons, powder

Instructions

  1. Preheat oven to 300°F (150°C), and line 2 cookie sheets with parchment paper.
  2. Mix together in a small bowl the sugar and cinnamon. Set aside.
  3. Combine the flour, baking soda, and salt and whisk together.
  4. Beat together the sugar and butter on medium speed for 3 minutes.
  5. Scrape the sides of the bowl, then add the vanilla and eggs, and beat to combine for about 1 minute.
  6. Add the flour mixture and mix until combined. Do not overmix the cookie dough.
  7. Using a tablespoon, shape the cookie dough into 1-inch balls then roll them into the sugar-cinnamon mixture.
  8. Place the cookies onto the lined baking sheets separating them about 2 inches apart, then slightly press them down to flatten.
  9. Bake the cinnamon sugar butter cookies for 16-18 minutes or until golden brown.
  10. Remove the cookies from the oven and transfer them using a spatula to a cooling rack to cool.
