Mücver – Turkish Zucchini Fritters
Description
The recipe for Mücver involves grating peeled zucchini and pressing out excess moisture to keep the fritters from becoming soggy. The batter combines fresh green onions, chopped dill, parsley, eggs, flour, and gentle spices including Aleppo pepper, which adds a subtle warmth without overwhelming the delicate zucchini flavor. Cooking the fritters in olive oil over medium heat ensures a crisp crust forms while maintaining a moist interior. They are fried in small batches for uniform browning and texture.
The flavor is herbaceous and mildly spiced with a fresh, tender zucchini and green onion presence. The fritters offer a delicate crunch outside while staying soft inside, contrasting the creamy yogurt accompaniment often served alongside. This dish fits well as a light snack, appetizer, or side to grilled meats and vegetables.
To achieve the crispiest fritters, thoroughly squeezing the grated zucchini removes excess water that might hinder browning and texture. Using a consistent portion size for each fritter helps even cooking. Medium heat protects against burning or greasy results. For an alternative to frying, baking or air frying the fritters after lightly brushing with olive oil provides a less oily option while still delivering a golden exterior.
Ingredients
- 3 zucchini peeled
- 2 large egg
- 6 tablespoons all-purpose flour
- 4 green onions chopped
- ¾ cup dill chopped, fresh
- ½ cup parsley chopped
- ½ teaspoon Aleppo pepper
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 6 tablespoons olive oil divided
Instructions
- Grate the zucchinis in a large bowl and squeeze them very hard. Discard all the excess liquid.
- Mix in the eggs, flour, green onions, dill and parsley.
- Add in the spices and mix well.
- Heat 2 tablespoons of olive oil in a pan over medium heat, pour 2 tablespoons of the batter into the pan and fry for about 5 minutes on one side. Flip and fry for 3 minutes on the other side.
- Try the fritter to make sure it has the right amount of spices. If so, proceed with the remaining batter. Add more olive oil if needed.
- Serve with plain or garlic yogurt on the side and some bread.
Notes
- Press the grated zucchini firmly to remove moisture, ensuring the fritters fry to crispness rather than soggy texture.
- Maintain medium heat when frying to achieve even golden browning without burning.
- Portion the batter evenly using a spoon or scoop to promote consistent cooking.
- Fry in small batches to avoid pan overcrowding which can cause soggy fritters.
- For a lighter version, consider baking or air frying the fritters after brushing with olive oil.
