Mulberry or Blackberry Sorbet

This Mulberry or Blackberry Sorbet blends fresh berries with a simple sugar syrup and a splash of blackcurrant liqueur or Port to deliver a smooth, fruity frozen treat. The process includes pureeing the berries and straining them to remove seeds, resulting in a fine-textured sorbet that highlights the natural tartness and sweetness of the fruit. It's a refreshing dessert suited for hot days or as a palate cleanser.

Description

The recipe starts with preparing a light sugar syrup by boiling sugar and water together, then cooling it slightly. Fresh mulberries or blackberries are cleaned, with mulberries needing stem removal. The berries are blended with the warm syrup to create a puree, which is then pushed through a fine sieve to remove seeds and stems, ensuring a smooth final texture. Adding blackcurrant liqueur or Port enhances depth and aroma.

Once chilled, the mixture is processed in an ice cream maker according to manufacturer's instructions to create a silky sorbet. The result is a frozen dessert with bright berry flavor, balanced sweetness, and a clean finish.

The sorbet is best served chilled as a light dessert or a refreshing accompaniment to richer dishes, allowing its pure berry taste to stand out.

Servings
  • 1 cup sugar
  • 1 cup water
  • 5 cups Mulberries or blackberries
  • 2 tablespoons blackcurrant or Port, also known as cassis

Instructions

  1. If you are using mulberries, pick off all the green stems from the berries.
  2. Bring the sugar and water to a boil over medium heat. Let it simmer gently for 3-4 minutes. Turn off the heat and let it cool a bit.
  3. Meanwhile, Put the berries in a blender. Pour the syrup over them while it is warm but not hot. Buzz into a puree.
  4. Push the berries through a fine-meshed sieve set over a bowl using a rubber spatula or wooden spoon; this removes a lot of the seeds and stems.
  5. Pour the liquor into the bowl with the pureed berries and chill in the fridge for an hour or so.
  6. Pour into your ice cream maker and follow its directions.
