Mushroom Filled Pork Tenderloin

This Mushroom Filled Pork Tenderloin features a boneless pork loin butterflied and stuffed with a savory sauté of mushrooms, onions, and herbs. The pork is rolled, tied with butcher's string, seared for a caramelized crust, and then roasted. Description

The preparation starts with sautéing chopped onion and mushrooms in olive oil seasoned with salt, pepper, oregano, and rosemary. Meanwhile, the pork tenderloin is butterflied and flattened with a meat mallet to create an even surface for stuffing. The mushroom mixture is spread along the center of the meat, which is then rolled and tied securely with butcher’s string at intervals.

After seasoning the exterior with salt and pepper, the pork roll is seared on all sides to develop a browned crust, then transferred to an ovenproof pan and roasted uncovered at 400°F for about 30 minutes, or to the preferred doneness. Resting the cooked tenderloin wrapped in foil allows the juices to redistribute, ensuring moist slices.

  • 1 pork tenderloin about a lb
  • 1 cup mushroom chopped
  • 1 onion chopped, medium
  • 2 tablespoons olive oil
  • ½ teaspoon oregano dry
  • ½ teaspoon rosemary dried
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 400℉.
  2. Heat 1 tbsp of the olive oil in skillet. Add chopped onion and saute until onion is translucent. Add chopped mushrooms and continue cooking for another 3 to 5 minutes. Season with salt and pepper and stir in oregano and rosemary. Set aside.
  3. Butterfly the pork loin, basically cut the pork down the center, without completely cutting through, so when you open the two halves they resemble a butterfly. Use your meat mallet to flatten it a bit.
  4. Take the mushroom mixture and spread it down the center of the pork loin and bring the 2 sides up. Use butcher strings to tie around the roll at 1 inch intervals.
  5. Season the stuffed pork with salt and pepper and in a large skillet heat the other tbsp of olive oil. Sear the pork loin on all sides. Move the pork loin in a large oven proof pan.
  6. Roast uncovered for about 30 minutes or until done to your preference.
  7. Remove from the oven and wrap it with foil and let it sit for 15 minutes before slicing.
