Mushroom Risotto

Ingredients

  • 2 tablespoons olive oil
  • 1 pound mushroom sliced, mixed varieties
  • 1 onion finely chopped, small
  • 2 cloves garlic minced
  • 1 cup arborio rice
  • 1/2 cup white wine dry
  • 4 cups vegetable broth warmed
  • 1/2 cup Parmesan Cheese grated
  • salt to taste
  • black pepper to taste
  • parsley chopped (for garnish, fresh

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until they are golden and have released their moisture, about 8 minutes. Remove mushrooms and set aside.
  2. In the same skillet, add onion and garlic, cooking until onion is translucent, about 5 minutes.
  3. Stir in Arborio rice and let it toast for 2 minutes. Add white wine and stir until absorbed. Gradually add warm vegetable broth, one cup at a time, stirring continuously until each cup is absorbed before adding the next. Cook until rice is creamy and al dente, about 20 minutes.
  4. Mix in the sautéed mushrooms and Parmesan cheese. Season with salt and black pepper. Garnish with fresh parsley before serving.
