Description

The Mushroom Stir Fry uses brown and white beech mushrooms along with optional oyster mushrooms cooked in a wok with vegetable and sesame oils. Fresh ginger and the white parts of green onions are first sautéed to infuse aroma. Mushrooms are added next with oyster sauce, light soy sauce, and optionally dark soy sauce for color, resulting in a glossy, savory coating. As the mushrooms cook, their natural water content evaporates, concentrating flavors and improving texture. Sesame oil added near the end provides a nutty finish.

  • 1 cup brown beech mushroom
  • 1 cup white beech mushroom
  • 10 oyster mushroom optional, pieces of
  • 1 tbsp. vegetable oil
  • 1 tsp. sesame oil
  • 1 ginger peeled and shredded, thumb piece of
  • 4 green onions , white part only, cut into small sections
  • 1/2 tbsp. oyster sauce , vegan for note 1
  • 1 tsp. dark soy sauce , optional only for dark color
  • 1/2 tbsp. soy sauce light

Instructions

  1. Clean and prepare the beech mushrooms and drain.
  2. Hit up some oil in wok, add green onion white to fry over slowest fire until slightly browned and seared. Add ginger shreds in.
  3. Then place mushrooms in, add oyster sauce and soy sauce. At the very beginning, there will be lots of water. Continue to evaporate most of the water. Takes 2 to 3 minutes. Mix in sesame oil.
  4. Transfer out and sprinkle fresh ground pepper.

Notes

  • For a vegan version, replace oyster sauce with 1 tablespoon light soy sauce mixed with 1 teaspoon cornstarch.
