Mushroom Stroganoff
Description
This Mushroom Stroganoff starts with gently cooking a mix of chopped mushrooms, diced shallots, and crushed garlic cloves in olive oil until the shallots soften and mushrooms release their moisture. The pan is then removed from heat, and crème fraîche, wholegrain mustard, paprika, sea salt, and black pepper are stirred in to create a creamy, rich mixture.
The result is a velvety stroganoff with earthy mushroom flavors balanced by the slight acidity and creaminess of the crème fraîche and a hint of spice from paprika. The sautéing method retains the texture of the mushrooms while melding the flavors into the sauce. Fresh parsley sprinkled on top adds an herbal freshness.
Serving this stroganoff over rice provides a hearty and warming meal suitable for a quick lunch or dinner. For variation, additional proteins like chicken or steak may be added, but adjusting cooking times is necessary. It works best cooked fresh, as reheating may cause the crème fraîche to separate.
Ingredients
- 1 tablespoon olive oil
- 300 g mushroom chopped, mixed varieties
- 4 shallot diced
- 2 garlic crushed, clove
- 4 tablespoon crème fraîche 0% fat
- 1 tablespoon wholegrain mustard
- 0.5 teaspoon paprika
- 1 pinch sea salt
- 1 pinch black pepper
- parsley for serving, fresh
Instructions
- Heat 1 tablespoon Olive oil in a large pan and add 300 g Mixed mushrooms, 4 Shallots and 2 Garlic clove. Gently cook for 6 minutes, until the shallots have softened.
- Turn the heat off and stir in 4 tablespoon 0% Creme fraiche, 1 tablespoon Wholegrain mustard, 0.5 teaspoon Paprika and 1 pinch Sea salt and ground black pepper.
- Mix well.
- Serve with rice and sprinkle with Fresh parsley.
Notes
- Avoid freezing this dish because crème fraîche can separate when reheated; it's best served fresh.
- Use a variety of mushrooms for deeper flavor complexity.
- For a vegan version, substitute with plant-based crème fraîche alternatives like Oatly.
