Mussels in White Wine Sauce
Description
Mussels in White Wine Sauce begins by gently sautéing minced garlic in extra virgin olive oil, infusing it with flavor before adding a touch of red pepper flakes for a subtle heat. Dry white wine is then boiled briefly to enhance the base flavor. Fresh, scrubbed mussels are added and steamed covered until they open, which takes about 3 to 5 minutes.
After the shells open, the mixture is finished with butter and minced Italian flat-leaf parsley, which enrich the sauce and add a fresh herbaceous note. The heat is carefully reduced to meld the flavors without overcooking the mussels, maintaining their tender texture.
This preparation works well served immediately, accompanied by crusty bread that allows diners to enjoy the garlicky, buttery sauce fully. Attention to cleaning and discarding any unopened mussels is crucial for safety and quality.
Reheating is not recommended in the microwave; if necessary, warm gently on the stovetop at low heat to prevent toughening the seafood.
Ingredients
- 3 tablespoons extra virgin olive oil
- 6 cloves garlic minced
- 1/4 teaspoon red pepper flakes optional, crushed, hot
- 1 cup white wine dry
- 2 pounds mussels scrubbed and cleaned
- 1/4 cup flat-leaf parsley minced, Italian
- 4 tablespoons butter
- salt to taste
Instructions
- Saute the minced garlic in the olive oil over medium-low heat until golden (about 2 minutes).
- Add in the hot red pepper flakes and cook for another 30 seconds. Add the white wine and bring to a boil for 2 minutes.
- Turn the heat to medium-high and add the mussels to the pan and cover.
- Once the mussels open (about 3-5 minutes) remove the lid.
- Turn the heat down to low and add in the butter and parsley and stir it all together to get all of the garlic and parsley into the shells. After 1 minute remove the pan from the heat. Taste test the sauce and season with salt and pepper. Serve with crusty bread to mop up all of the sauce. Enjoy!
Notes
- Wash and scrub mussels thoroughly, removing any beards with a kitchen towel before cooking.
- Discard any mussels that do not open within 5 to 7 minutes of cooking to ensure safety.
- Serve immediately for best texture and flavor; reheat gently on low heat if needed, avoiding microwave reheating.
