My Favorite Reuben Sandwich
Description
This Reuben Sandwich is prepared by buttering rye bread slices and spreading Thousand Island dressing on the insides, then layering Swiss cheese, drained sauerkraut, and corned beef between. Using either leftover cooked or deli-sliced corned beef, the sandwich is assembled with butter side out and cooked in a skillet over medium-low heat until both sides are lightly browned and crisp. The cooking process melts the cheese and warms the interior fillings.
The combination of Swiss cheese’s mild nuttiness, the salty corned beef, and the tangy sauerkraut with creamy dressing delivers a harmonious flavor profile. Ingredients
- 4 tablespoons butter
- 8 lices rye bread
- 16 ounces corned beef * sliced
- 8 lices swiss cheese
- 1 cup sauerkraut drained and squeezed dry
- ½ cup Thousand Island dressing
Instructions
- Butter each slice of bread. Place 4 slices, butter side down, on the table or a cutting board.
- Spread the slices with 1 tablespoon dressing and top with 1 slice of cheese (or more to taste), ¼ of the sauerkraut and ¼ of the corned beef.
- Spread remaining dressing on the second piece of bread and place on top of sandwich, butter side out.
- Place in a skillet over medium low heat and cook until just golden and crisp. Flip and cook on remaining side.
- Cut in half and serve with additional dressing for dipping.
Notes
- Use thickly sliced leftover cooked corned beef or deli corned beef for best texture.
- Warming the corned beef before assembling can keep the bread crisp and the sandwich hot.
- For a crisper crust, substitute mayonnaise for butter on the outside of the bread before grilling.
