Nachos with Sweet Potato (Easy and Healthy Dinner Idea!)

This easy recipe for nachos is crispy blue corn chips with gooey cheese, black beans, and topped with roasted sweet potato chunks. It takes traditional nachos to the next level. This nachos recipe is healthy, delicious and the perfect snack or dinner ready to go in no time!

Ingredients

  • 1 large sweet potato peeled and diced
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 1 cup sweet peppers (about 4-5 peppers, any color) diced
  • 1 packet taco seasoning homemade or store-bought, about 3 tbsp
  • 1 can black beans drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 bag blue corn tortilla chips
  • 2 cups shredded Monterey jack cheese

Instructions

  1. Preheat your oven to 400 degrees F and line a baking sheet with parchment paper. Place the diced sweet potato on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper.
  2. Roast in the oven for about 15-20 minutes, or until the sweet potato is tender and slightly caramelized.

for the nachos

  1. In a skillet over medium heat add olive oil, once hot add the onion and peppers. Cook for a few minutes, until vegetables are tender. Add the ground beef to the skillet and cook until browned. Stir in the taco seasoning until fully combined.
  2. Add the cooked sweet potato chunks, cherry tomatoes, and black beans to the skillet; stir until well combined.
  3. Arrange a layer of tortilla chips on a baking sheet. Spoon the ground beef and sweet potato mixture evenly over the chips, spreading it out to cover the chips.
  4. Sprinkle the shredded cheese on top of the nachos.
  5. Bake in the preheated oven for 8-12 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let cool slightly before serving.
  7. Garnish with your favorite toppings such as fresh salsa, avocado slices, sour cream, or chopped cilantro. 

Notes

  • For quicker cooking time, simply place the diced sweet potato in a baking dish with 1 tablespoon of water into the microwave. Season with salt and pepper, cover and heat 5-6 minutes.
