Nando's Spicy Rice
Description
Nando's Spicy Rice features basmati rice cooked with a fragrant mixture of sautéed vegetables and spices. Softened onions, bell pepper, green chili, and garlic release flavors into olive oil before spices like turmeric, cayenne pepper, and paprika are added to create a vibrant, spicy base. Canned tomatoes simmer with the spices providing body and moisture.
After adding soaked and drained rice with water, the mixture cooks initially over high heat to reduce liquid, then simmers covered on low heat with lemon juice and coriander incorporated last to infuse fresh acidity and herbal aroma. The rice should be tender with a slightly spicy and bright flavor profile.
This dish pairs well with peri chicken and is suitable as a side or main component in meals where spicy, flavorful rice is desired. The preparation balances mild heat from chili and spices with fresh citrus and leafy notes, making it a versatile complement to grilled or roasted proteins.
Ingredients
- 200 g rice Basmati
- 450 ml water
- 2 tbsp olive oil
- 1 tsp salt
- 1 onion
- 1 green chili
- 1 bell pepper
- 2 garlic
- 1 tbsp lemon juice
- ½ tsp paprika
- ½ tsp cayenne pepper
- ½ tsp turmeric powder Haldi
- 200 g tomato Canned
- Coriander
Instructions
- Add the olive oil into the pan and heat on medium heat until hot
- Add the finely diced onion and cook for 2-3 minutes
- Add the finely chopped bell pepper and green chilli then cook for a further 4-5 minutes
- Add the finely chopped garlic cloves and cook for 1-2 minutes on medium heat
- Add the salt, turmeric powder, cayenne powder and paprika then cook the spices for 1-2 minutes
- Add the canned tomatoes then cook for another 4-5 minutes on medium heat
- Drain the soaked rice and the cold water then stir before cooking for 8-10 minutes on high heat until the water is almost dried up
- Add the lemon juice and finely chopped coriander then cover and cook on low heat for 8-10 minutes
- Serve immediately alongside some peri chicken and enjoy!
