No Bake Apple Pie Parfaits
Description
This dessert assembles diced Granny Smith apples tossed in apple butter to infuse sweetness and flavor. Greek yogurt mixed with sugar and vanilla lends a tangy richness, which is folded into stiffly whipped heavy cream for a light but creamy filling. Shortbread cookie crumbs create a buttery crunch between layers. The parfaits are built by alternating cream mixture, cookie crumbs, and apple mixture in clear glasses or dishes, repeating layers to fill.
The flavor balance includes the tartness of apples, sweetness of apple butter and sugar, and richness from whipped cream and cookies. The no bake method simplifies preparation while still offering familiar spiced apple pie flavors and textures. The dish is served chilled or at room temperature depending on preference.
These parfaits work well as an individual dessert for gatherings or a make-ahead option for seasonal meals. The layered presentation highlights the different components and makes it visually appealing. The use of Greek yogurt keeps the cream mixture lighter and adds a slight tanginess that complements the sweet elements.
Choose firm apples like Granny Smith for texture, or sweeter varieties to adjust taste. Cold heavy cream whips better, so keep it refrigerated until use. Allow cookie crumbs to be the last layer to maintain some crispness, or chill covered to let textures meld.
Ingredients
- 2 cups apple Granny Smith, peeled and diced
- 1/2 cup apple butter
- 1 cup Greek yogurt plain, nonfat
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 ½ cups shortbread cookies crumbs
Instructions
- In a small bowl, toss together chopped apple and apple butter.
- In a separate small bowl, mix Greek yogurt, sugar, and vanilla together. Set aside.
- In a separate medium bowl, whip cream until it begins to thicken.
- Continue to whip until cream is at stiff peaks.
- Gently fold Greek yogurt mixture into whipped cream.
- To assemble, place about 2 tablespoons cream mixture in bottom of dish or glass.
- Top with crumbled cookie, 2 more tablespoons of cream, and then chopped apple mixture.
- Repeat layers.
- On the final layer, layer crumbled cookie, apple mixture, and end with cream mixture.
- Sprinkle with additional cookie crumbs.
- Serve immediately if you want crispier cookie, or loosely cover and chill until ready to serve.
Notes
- Use Granny Smith apples for a crisp and tart flavor; sweeter apples like Pink Lady or Honeycrisp are also good alternatives.
- Greek yogurt can be substituted with sour cream or plain 2% or whole milk yogurt if preferred.
- Ensure heavy whipping cream is well chilled before whipping to achieve stiff peaks.
- Shortbread cookies such as Lorna Doone work well, but any shortbread cookie can be used for the crumb layer.
- Serve immediately for crispier cookie texture or chill covered for softer layers.
