No Bake Banana Caramel Pecan Pie is made with a shortbread crust topped with caramel and a creamy banana filling with crunchy pecans. This makes one incredible no bake pie!

Crust

  • 1 (11-ounce) shortbread cookies about 2 cups crushed cookies, package
  • ¼ cup pecan nuts brand Fisher Nuts
  • 2 tablespoons granulated sugar
  • 6 tablespoons butter unsalted

Caramel layer

  • 11 ounces caramel soft, unwrapped
  • 2 tablespoons heavy cream

Banana Pecan Layer

  • 1 cup milk
  • 1 (3.4-ounce) instant banana pudding mix box
  • 4 ounces cream cheese softened
  • ½ cup sweetened condensed milk
  • 1 banana diced
  • ½ cup pecan nuts chopped, brand Fisher Nuts
  • pecans chopped, for garnish

Instructions

Crust

  1. In a food processor, add 1 (11-ounce) package shortbread cookies, and ¼ cup Fisher Nuts Pecansand pulse until they are fine crumbs.
  2. Add the 2 tablespoons granulated sugar and 6 tablespoons unsalted butter and mix until incorporated. Press firmly into a greased pie dish. Refrigerate while you make the next layer.

Caramel Layer

  1. Melt the 11 ounces unwrapped soft caramels and 2 tablespoons heavy cream in a microwave-safe bowl, stirring every 30 seconds until smooth and melted. Pour over shortbread crust and refrigerate to set.

Banana Pecan Layer

  1. In a large bowl, whisk the 1 cup Milk and the 1 (3.4-ounce) box instant banana pudding together until it starts to thicken.
  2. In another medium bowl, add the 4 ounces softened cream cheese and ½ cup sweetened condensed milk and whisk until smooth. Fold into the banana pudding mixture.
  3. Fold the 1 banana diced and ½ cup chopped Fisher Nuts Pecans into the mixture until incorporated and spread evenly on top of the caramel layer.
  4. Chill the pie for at least 3 hours or until set. Top with chopped pecans for garnish and bananas if desired.
