No Bake Brownies

Report
No bake brownies with a nut and date base topped by a smooth cocoa and banana layer combine rich chocolate and natural sweetness. The almonds and desiccated coconut give a crumbly texture to the bottom layer while the banana and almond butter topping adds softness and flavor without baking. Freezing the assembled bars firms the topping to create sliceable brownies that can be stored for weeks.

Description

These no bake brownies start with a base made from ground almonds, cocoa powder, desiccated coconut, and pitted dates, processed together until crumbly and then pressed into a lined pan. A smooth topping is prepared by blending cocoa powder, liquid sweetener, orange extract, almond butter, and ripe bananas until creamy and spread over the chilled base. Freezing the assembled brownies for several hours allows the topping to set solid so they can be cut cleanly into bars.

The texture contrasts between the slightly crunchy nutty base and the soft, rich chocolate-banana topping. The flavor is a blend of chocolate with hints of orange extract and natural sweetness from the bananas and dates. This recipe requires no baking, making it convenient during warm weather or when an oven-free dessert is desired.

These brownies should be stored frozen to prevent melting, especially in warmer conditions. They keep for one to two weeks in the freezer and are best enjoyed chilled. By swapping nuts or using avocado for banana, different flavors and textures can be explored.

  • 4 tablespoon liquid sweetener
  • 1 teaspoon orange extract
  • 4 tablespoon almond butter
  • 2 banana

Instructions

  2. Tip this mixture into a lined 10x8 inch brownie tray and press down with your hands so it is packed down and even.
  3. Put 60 g Cocoa powder, 4 tablespoon Liquid sweetener, 1 teaspoon Orange extract, 4 tablespoon Almond butter and 2 Banana into a food processor until smooth.
  4. Spread onto the pressed crumb mix and then put it in the freezer and freeze for 2-3 hours until the topping has hardened.
  5. Remove from the freezer and slice into 12 squares.

Notes

  • You can substitute some or all almonds in the base with other nuts like pecans or walnuts for varied texture and flavor.
  • Orange or mint extract can be used in the topping to change the flavor profile while complementing the chocolate.
  • Any nut or seed butter may replace almond butter depending on preference or availability.
  • If you prefer, avocado can be used instead of banana in the topping for a different creamy texture.
  • For a richer topping, melted dark chocolate can be folded into the mixture before freezing.
  • Keep the brownies frozen until serving, cutting off pieces as needed; they remain firm and fresh for 1-2 weeks in the freezer.
