  • 3 cups Graham Cracker Crust
  • ½ cup brown sugar packed
  • ¾ cup butter melted, salted

For the Filling

  • 1 ½ cups heavy cream very cold
  • 3 ounce blocks cream cheese
  • ½ cup sugar
  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup sour cream at room temperature

Toppings

  • 1 cup fresh berries
  • Whipped Cream as desired, spray
  • strawberry sauce as desired, or raspberry sauce

Instructions

Prepare the Crust

  1. Stir together graham cracker crumbs, brown sugar, and melted butter.
  2. Press mixture firmly (this is important to make sure the crust doesn't fall apart!) into bottom of a 10-inch springform pan. Freeze for 10-20 minutes while you prepare the filling.

Prepare the Filling

  1. In a glass bowl, whip cream (this is quicker and easier with an electric mixer but can be done by hand) until stiff peaks form.
  2. In a second bowl, cream together cream cheese and sugar. Mix in powdered sugar, vanilla, and sour cream. Add and mix in whipped cream.
  3. Scoop filling into frozen crust and use a spatula or spoon to smooth out the top into an even layer.
  4. Chill in fridge (do not freeze) 4 hours or overnight.
  5. Top with berries and whipped cream if desired, slice, and serve.

Notes

  • Full-fat cream cheese is recommended for best texture, but reduced-fat versions can be used with minor textural differences.
  • Adding 1-2 teaspoons of fresh lemon juice enhances tanginess if desired.
