Description
The base of this no bake chocolate cheesecake is made from finely crushed Oreo cookies mixed with melted butter, pressed firmly into a pan and frozen briefly to set. The filling blends softened cream cheese with powdered sugar, sour cream, melted chocolate, and vanilla extract to create a rich chocolate mixture. Whipped cream beaten to stiff peaks is folded in for lightness and creaminess.
This cheesecake is spread over the chilled crust and refrigerated for several hours to firm up before serving. The result is a smooth and creamy dessert with a balance of sweet creaminess and chocolate bitterness, contrasted by the crunchy, chocolaty crust.
Leftovers should be stored in an airtight container in the refrigerator to maintain freshness. The recipe is scalable to larger pans by doubling the ingredients.
Ingredients
Oreo Crust
- 1 1/3 cup oreo cookie crumbs for baking
- 1/3 cup butter melted, unsalted
Chocolate Cheesecake Filling
- 1 cup heavy whipping cream
- 1 cup powdered sugar
- 10 oz cream cheese , very soft
- 1/4 cup sour cream
- 8 oz semi-sweet chocolate , melted and cooled
- 1 tsp vanilla extract
Instructions
- Line an 8x8 or 9x9 inch square pan with aluminum foil.
- In a medium bowl stir together the Oreo crumbs and melted butter.
- Press into the bottom of the prepared pan and place in the freezer while you make the filling.
- In a large bowl beat the whipping cream and 1/4 cup of the powdered sugar until stiff peaks form.
- In a separate bowl beat together the cream cheese and remaining powdered sugar (3/4 cup) until soft. Then beat in the sour cream, melted chocolate and vanilla extract.
- Mix the whipping cream into the cream cheese mixture until evenly combined.
- Spread the filling overtop of the Oreo cookie crust and place the cheesecake in the fridge for at least 4 hours to harden.
Notes
- This recipe can be doubled to bake in a 9x13 inch pan for a larger serving.
- Store leftovers in an airtight container in the refrigerator to keep the cheesecake fresh.
