No-Bake Chocolate Peanut Butter Bars
Description
The recipe starts by mixing melted unsalted butter, graham cracker crumbs, powdered sugar, half the peanut butter, and salt until well combined. This mixture is pressed firmly into a lined pan and chilled to firm up. Separately, semisweet chocolate chips and remaining peanut butter are melted together, then stirred with rice crispy cereal to add crunch.
This chocolate-cereal mixture is spread over the chilled peanut butter base and refrigerated until firm. The bars can then be cut and served. They store well in an airtight container in the refrigerator for about a week, or at room temperature depending on preference, making them convenient for make-ahead treats.
The layering of smooth peanut butter and crunchy graham cracker base with the chocolate crispy topping offers a pleasing texture and flavor contrast, suitable for casual snacking or dessert.
Ingredients
- 1 cup unsalted butter melted
- 2 cups graham cracker crumbs
- 2 cups powdered sugar
- 2 cups creamy peanut butter divided
- 1/2 /2 teaspoon salt
- 2 cups semisweet chocolate chips
- 1 1/2 /2 cups rice crispy cereal
Instructions
- Line an 9x13 pan with parchment paper or spray with cooking spray.
- In a large mixing bowl (or by hand with a spoon), beat together the melted butter, graham cracker crumbs, sugar, 1 cup peanut butter, and salt. Spread into the pan. Refrigerate at least 15 minutes to firm up.
- In a microwave safe bowl melt together the chocolate chips and remaining 1 cup peanut butter in the microwave in 30 second intervals, stirring in between until smooth (a double boiler can also be used). Remove from the heat and stir in the cereal. Spread on top of the chilled peanut butter layer. Refrigerate until chocolate is firm before serving. Store in an airtight container for up to 1 week in the fridge or at room temperature depending how you like them.
Notes
- Prepare bars in a parchment-lined pan to ease removal and cutting.
- Refrigerate the base layer for at least 15 minutes to ensure it firms before adding the chocolate layer.
- Use intervals of 30 seconds when melting chocolate and peanut butter to prevent scorching, stirring between intervals.
- Store finished bars in an airtight container in the refrigerator for up to one week or at room temperature depending on preference.
- The cereal topping provides a crunchy texture contrast to the creamy chocolate peanut butter layer.
