No Bake Chocolate Peanut Butter Cookies
Description
No Bake Chocolate Peanut Butter Cookies rely on heating sugar, butter, milk, and cocoa powder to a boil and then mixing in peanut butter, vanilla, and quick oats. The hot mixture slightly cooks the oats and melds the ingredients into a batter that firms once cooled. This method delivers a chewy, slightly fudgy cookie that sets without baking. You can shape the dough into flattened cookies or roll into bite-sized balls and coat with toppings such as chocolate, nuts, or coconut.
The peanut butter offers a creamy flavor and richness balancing the cocoa’s slight bitterness, while oats provide a hearty chew. The lack of baking means these treats set quickly and maintain a soft texture rather than becoming crunchy.
These cookies suit those looking for a no-oven-required dessert or snack, especially when quick prep and cooling are preferable. They can be customized by varying nut butter types or toppings to adjust flavor and texture.
The recipe notes suggest omitting cocoa powder for a pure peanut butter flavor and mention the option to use creamy or crunchy peanut butter. Variations with almond or cashew butters are also possible to tailor the taste.
Ingredients
- 1 1/2 cups granulated sugar
- 1 butter unsalted, stick
- 1/2 cup milk
- 1/3 cup cocoa powder unsweetened
- 1 cup peanut butter
- 3 cups quick oats oatmeal
- 1 teaspoon vanilla extract
- chocolate chips chopped peanuts, shredded coconut for topping the cookies or rolling in cookie bites.
Instructions
- In a medium saucepan bring to a boil, sugar, butter, milk, and cocoa. Let boil for 1 minute then remove from heat and add the peanut butter, vanilla and oatmeal.
- Put in a bowl and cool in the refrigerator for 15 minutes. On two baking sheets covered with parchment or waxed paper, drop mixture by the teaspoonfuls. Let cool. The dough will firm up and be easy to form with your hands.
- Flatten each cookie with the back of a spoon and garnish with chocolate chips OR roll into 1 - 1 1/2 inch balls and roll into toppings of your choice.
Notes
- Omitting cocoa powder yields a more pronounced peanut butter flavor; add 1/4 cup extra peanut butter when doing so.
- Use all-natural creamy peanut butter for a smooth texture or opt for crunchy peanut butter for added bite.
- Experiment with other nut butters like almond or cashew to change the flavor profile.
