No Bake Cookies
Description
No Bake Cookies are made by boiling a mixture of sugar, butter, milk, and cocoa powder just until it reaches a rolling boil, ensuring the sugar dissolves properly for a shiny, firm set. After removing from heat, peanut butter adds creaminess and depth along with vanilla and a pinch of salt to round out the flavor. Quick oats are folded in, providing chewy texture and body. The batter is spooned onto lined baking sheets and chilled until firm, resulting in dense, chocolate-peanut flavored cookies.
These cookies can be stored refrigerated for up to two weeks or frozen for longer storage. Using quick-cooking oats helps the cookies bind properly. It's important not to overcook the mixture to avoid a hardened or grainy texture. Once cooled thoroughly, the texture firms up but remains chewy.
Ingredients
- 2 cups granulated sugar
- ½ cup butter
- ½ cup milk
- ½ cup cocoa powder unsweetened
- ½ cup peanut butter
- 2 teaspoons vanilla extract
- ⅛ teaspoon salt
- 3 cups quick oats
Instructions
- Line two baking sheets with parchment paper. Set aside.
- In a medium saucepan, combine sugar, butter, milk, and cocoa powder. Bring it to a boil over medium heat. Once it is at a rolling boil, boil for 1 minute.
- Remove from the heat and whisk in the peanut butter, vanilla, and salt until smooth. Stir in oats. Drop by spoonfuls or use a cookie scoop to drop the oat mixture on the prepared baking sheet.
- Refrigerate for at least 30 minutes or until cookies are set.
Notes
- Store cookies in an airtight container in the refrigerator for up to 2 weeks or on the counter for up to 1 week.
- They can also be frozen for up to 2 months for longer storage.
- Use quick-cooking oats and real butter for the best texture and flavor.
- Bring mixture to a full rolling boil over medium heat and boil exactly 1 minute to avoid overcooking.
- Allow cookies to cool completely before eating to set properly.
