No-Bake Cookies (VIDEO)
Description
This recipe creates no-bake cookies by first bringing together butter, granulated sugar, milk, and unsweetened cocoa powder in a saucepan and boiling the mixture for a minute. After removing from heat, creamy peanut butter, vanilla extract, and kosher salt are stirred in until smooth. Quick oats are folded in last for texture. Spoonfuls of the mixture are dropped onto parchment-lined sheets and allowed to cool at room temperature for 20 to 30 minutes until firm.
The finished cookies have a slightly soft but firm texture, combining chocolate and peanut butter flavors enhanced by a touch of vanilla and salt. The quick oats give them structure and a slight chewiness.
These cookies are a convenient sweet treat requiring no oven, suited as an afternoon snack or casual dessert. They can be stored in airtight containers at room temperature for a few days or refrigerated for up to a week.
Freezing the cookies extends their storage time while maintaining their texture.
Ingredients
- 1/2 cup unsalted butter cut into tablespoon pieces
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup cocoa powder unsweetened
- 1/2 cup peanut butter creamy
- 2 teaspoons vanilla extract pure
- 1/2 teaspoon kosher salt
- 3 cups quick oats
Instructions
- Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
- Place the butter, granulated sugar, milk, and cocoa powder in a medium saucepan. Over medium heat, bring to a boil, stirring occasionally. Once the mixture is at a rolling boil, boiling around the edges and in the middle, boil for one minute.
- Remove the pan from the heat and stir in the peanut butter, vanilla, and salt. Stir until peanut butter is melted and smooth. Stir in the oats.
- Drop spoonfuls of the mixture (about 2 tablespoons per cookie) onto the prepared baking sheets, and let sit at room temperature until cooled and hardened, about 20 to 30 minutes.
Notes
- Store cookies in an airtight container at room temperature for up to 3 days.
- Refrigerate cookies to extend freshness up to 1 week.
- Cookies can be frozen for longer storage without loss of quality.
