No Bake Key Lime Parfaits

No Bake Key Lime Parfaits feature layers of crumbly graham cracker crust and a creamy lime filling made from cream cheese, sweetened condensed milk, and freshly squeezed lime juice. The whipped heavy cream adds lightness, and the parfaits are chilled before serving, resulting in a cool, tangy dessert with a smooth texture. These parfaits offer a convenient make-ahead option without the need for baking.

Description

The No Bake Key Lime Parfaits combine a buttery graham cracker crumb base with a rich, lime-flavored cream featuring cream cheese, sweetened condensed milk, and lime juice. Whipping cold heavy cream separately and folding it in gives the filling a light and fluffy texture. The parfaits are assembled in layers of crumbs and lime mixture in individual jars or glasses to showcase their distinct layers.

Chilling the parfaits for at least two hours allows the flavors to meld and the filling to set properly, creating a refreshing dessert with a balance of creamy tang and crumbly texture. Before serving, whipped cream sweetened with confectioners sugar and a sprinkle of lime zest add a fresh, decorative finish.

This no-bake recipe is suitable for warm weather or when an easy-to-prepare, cool dessert is desired. Using a food processor can simplify blending the ingredients and crushing the crackers. The lime flavor can come from key limes or standard limes based on availability and preference.

Ingredients

Servings
  • 1 1/2 cups graham cracker crumbs
  • 6 Tbsp unsalted butter melted
  • 1 cup heavy cream cold
  • 12 ounces cream cheese
  • 1 cup sweetened condensed milk
  • 1/2 cup lime freshly squeezed key lime juice or regular lime juice

topping

  • 1/2 cup heavy cream
  • 2 Tbsp confectioners sugar
  • lime zest

Instructions

  1. Mix the graham cracker crumbs with the butter until thoroughly blended. I like to do this with my fingers. Set aside.
  2. Whip the heavy cream. I do this right in my food processor. Process until the cream is thick and holds its shape. This won't take long, don't over whip.
  3. Add the cream cheese, breaking it up into chunks as you add it, and process until smooth. Process in the sweetened condensed milk and lime juice until smooth and creamy.
  4. Put 2 tablespoons of the crumbs at the bottom of each of 6 parfait jars or glasses. Top with about 1/4 cup of the key lime mixture. Add 2 more tablespoons of crumbs, topped with another 1/4 cup of lime mixture.
  5. Cover and chill the parfaits until ready to serve. I recommend at least 2 hours.
  6. Whip the cream with confectioner's sugar to top the parfaits before serving. Garnish with lime zest.

Notes

  • Use a food processor to crush graham crackers and blend ingredients efficiently for consistent texture.
  • Keep heavy cream and cream cheese cold for best whipping results.
  • Allow parfaits to chill at least 2 hours to set filling and enhance flavor blending.
  • Whip topping cream with confectioners sugar just before serving for freshness.
