No Bake Paleo Lemon Bars

No Bake Paleo Lemon Bars feature a nutty, date-sweetened crust topped with a creamy, tangy lemon filling made from soaked cashews, fresh lemon juice, and honey. These bars offer a smooth texture balanced by the crisp crust and a bright citrus flavor. Chilling the bars until firm provides a refreshing, nutrient-dense dessert that does not require baking, making it convenient and fresh-tasting.

Description

The crust is prepared by pulsing raw cashew nuts and chopped dates in a food processor, then adding a small amount of water to form a firm, thin base pressed into a pan. The crust is frozen to set while the lemon cream is blended separately.

The lemon filling blends soaked cashews with fresh lemon juice, raw honey, lemon zest, and a pinch of salt until smooth and creamy. This creates a vibrant and tangy layer that contrasts with the sweet, crunchy crust. Once assembled, the bars are frozen for several hours to achieve a firm texture before serving.

Letting the bars stand briefly at room temperature before slicing softens them just enough for clean cuts and enjoyable eating. These bars serve well as a fresh, paleo-friendly dessert option for those seeking a citrus-forward, no-bake treat produced with whole ingredients.

Note that the chilling time is essential for firm slices and the fresh lemon juice is preferred to avoid canned lemon flavor. The bars can be stored frozen and thawed prior to serving.

Ingredients

Servings

For the crust:

  • 2/3 cup cashew nuts 93 grams, raw
  • 1/2 cup dates roughly chopped and loosely packed (70 grams)
  • 1/2 teaspoon water

For the bars:

  • 2 cups cashew nuts soaked in water overnight (270 grams, raw
  • 1/2 cup lemon juice don’t use bottled, fresh
  • 5 tablespoons honey Nature Nate’s raw & unfiltered
  • 1 tablespoon lemon packed, zest
  • Pinch salt

Instructions

To make the crust:

  1. Line an 8x8 inch pan with parchment paper, leaving an overhang to use as a handle.
  2. Place the cashews into a large food processor and pulse until broken down and crumble. Add in the dates and pulse until combined and the mixture begins to form a crumbly dough. With the food processor running, stream in the water until well mixed.
  3. Press the crust firmly into the bottom of the prepared pan. You need to press it very thin, so really use your muscle and work it in there. Place into the freezer while you make the cream.

To make the cream:

  1. Drain the cashews and place them into a high-powered blender. Add all the remaining ingredients and blend until smooth and creamy, stopping to scrape down the sides as necessary.
  2. Pour over the crust and smooth out evenly. Freeze until totally firm, about 4-6 hours.
  3. Let the bars stand at room temperature for 5-10 minutes before slicing. Then, DEVOUR

Notes

  • Freezing for 4-6 hours is required to let bars firm up properly before slicing.
  • Use fresh lemon juice, not bottled, to achieve a bright, natural lemon flavor.
  • Allow bars to sit at room temperature 5-10 minutes before cutting to improve texture and slicing ease.
  • Soaking cashews overnight ensures a creamy lemon filling consistency when blended.
