NO BAKE PEANUT BUTTER CUP ENERGY BITES

No bake peanut butter cups filled with nutritious ingredients that will give you energy.

Ingredients

  • 1 cup rolled oats use gluten-free if necessary, of
  • 1 tablespoon ground flax seed
  • ½ cup peanut butter natural, of
  • 2 Medjool dates if the dates are dry, soak in water for twenty minutes to plump up, pitted
  • sea salt pinch, ground
  • 1 cup chocolate chips vegan (e.g. Enjoy Life brand), melted, of

Instructions

  1. Grind the oats in a food processor until it resembles flour. Add the flax seed and process until blended. Add the peanut butter, dates, and sea salt and process until it forms a ball.
  2. Melt the chocolate chips until the chocolate is thin and pourable.
  3. Roll the dough into one inch balls and cover with the chocolate. Freeze for thirty minutes.
  4. Keep refrigerated in an airtight container for up to one week.
  5. Enjoy!
