No Bake Peanut Butter Pie
Description
The No Bake Peanut Butter Pie begins with a chocolate pie crust, either pre-made or homemade from chocolate graham crackers, sugar, and melted butter baked briefly. The filling blends softened cream cheese and peanut butter with powdered sugar, milk, and vanilla to create a smooth base. Separately, heavy whipping cream is whipped to stiff peaks with powdered sugar, then folded into the peanut butter mixture to add lightness and creaminess.
This airy filling is poured into the prepared crust and topped with chopped Reese's peanut butter cups, adding a crunchy contrast. The pie is chilled for at least two hours to set, resulting in a dessert that is rich but fluffy, with a balance of chocolate and peanut butter flavors.
The recipe includes detailed steps for making the crust in advance and recommends preparing components separately to maintain freshness before assembling. This pie is ideal as an easy make-ahead dessert without requiring baking of the filling.
Ingredients
- 8 ounces cream cheese softened
- 3/4 cup peanut butter
- 1 cup powdered sugar sifted
- 2 tablespoons milk
- 1 teaspoon vanilla
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar sifted
- 1 inch chocolate pie crust or make your own, see recipe below, pre-made
- 2 Reese's peanut butter cups chopped
Instructions
- Use an electric mixer or a large mixing bowl with electric beaters. Chill the mixing bowl and mixing attachment or beaters in the fridge for 15 minutes.
- Sift 1 cup and 2 tablespoons powdered sugar. Set aside.
- Stir or beat cream cheese and peanut butter until smooth in a bowl (not chilled). Add 1 cup sifted powdered sugar, milk, and vanilla.
- Pour heavy cream and remaining 2 tablespoons of powdered sugar into the chilled mixing bowl. Whip until stiff peaks form.
- Fold 1/3 of the whipped cream into the peanut butter mixture. Mix well. Add remaining whipped cream and mix until smooth and creamy.
- Pour filling into the prepared chocolate crust. Top with chopped Reese's Peanut Butter cups. Lightly cover and chill for 2 hours or until set.
Notes
- You can prepare the chocolate pie crust ahead and refrigerate it to save time.
- Store the peanut butter filling separately in the fridge if assembling later.
- Add the filling and chopped peanut butter cups to the crust just before serving for best texture.
- Chill the assembled pie for at least 2 hours to ensure it sets properly.
