No Bake Pecan Pie Dip
Description
No Bake Pecan Pie Dip features a whipped cream cheese and homemade whipped cream base that is light and fluffy, sweetened with powdered sugar. The topping is a pecan pie-like filling made by simmering butter, brown sugar, corn syrup, and pecans into a caramel sauce, finished with vanilla extract. This sauce thickens as it cools to room temperature and is spread over the chilled cream mixture to create the dip. The contrast between the creamy base and the sticky, crunchy pecan topping creates an inviting texture combination.
The dip is served with a variety of dippers like fresh apple slices, butter waffle cookies, graham crackers, Biscoff cookies, crackers, or French bread, adding varied textures and flavors to each bite. It is visually appealing as the glossy caramel pecan sauce spreads over the white, fluffy base, inviting guests to combine the layers in each serving.
The recipe requires chilling the cream cheese mixture to develop its texture and letting the caramel pecan topping cool to a safe temperature before serving to avoid melting the base. This dip is a flavorful no-bake dessert choice that presents a pecan pie-inspired flavor without the oven or crust.
Ingredients
- (1) ounce pkg. cream cheese (softened)
- 1 cup + 2 Tablespoons powdered sugar
- 3/4 cup heavy cream (whipped)
Pecan Pie Filling:
- 4 Tablespoons butter salted
- 1/2 cup brown sugar
- 1/2 cup light corn syrup
- 1 cup pecans
- 1 to 2 teaspoons vanilla extract
Instructions
- Add the softened cream cheese to a mixing bowl. Whip for 3-4 minutes or until light and fluffy. Scrape the sides and the bottom of the bowl twice to ensure there aren't any clumps. Add in powdered sugar and whip for 1 minute longer.
- In a bowl, whip the heavy cream to stiff peaks. Carefully fold into the cream cheese mixture. Cover and place in the refrigerator to chill for 1-2 hours.
- In a saucepan, melt butter over medium heat. Add brown sugar and Karo syrup. After everything is melted together, add pecans. Let cook for about 3-4 minutes until it is lightly simmering. Add vanilla extract.
- Set aside to come to room temperature, about 15-20 minutes. The caramel pecan sauce will stiffen as it cools.
- Spread the cream cheese whipped cream mixture on a plate. Top with caramel pecan sauce (make sure it isn't too hot).
- Serve with fresh apple slices, butter waffle cookies (Trader Joe's), graham crackers, Biscoff cookies, crackers, or French bread slices.
Notes
- Use softened cream cheese and homemade whipped cream for a lighter texture than store-bought whipped toppings.
- Allow the caramel pecan topping to cool to room temperature before spreading to prevent melting the cream base.
