Description
No-Bake Reese's Cookies are made by heating corn syrup, sugar, and peanut butter until well combined, then mixing this syrupy base with Rice Krispies cereal and milk chocolate chips. Once blended, chopped Reese's peanut butter cups are folded in to add pockets of rich, creamy peanut butter and chocolate. The mixture is scooped into spoonful-sized balls and allowed to set on parchment paper, firming up without requiring any baking.
The result is a treat with a chewy, sticky consistency anchored by the crisp cereal, balanced by the sweet and salty combination of peanut butter and chocolate. These cookies hold together well but remain soft and pliable rather than crumbly.
Because they require no oven time, they can be quickly prepared and enjoyed as a convenient sweet bite. They are suitable for sharing at gatherings or as an easy dessert option when baking is not preferred.
Ingredients
- 4 cups Rice Krispies cereal
- 1 cup light corn syrup
- 3/4 cup granulated sugar
- 1 1/4 cup peanut butter
- 5 peanut butter cups (Reese's regular sized)
- 1/2 cup milk chocolate chips
Instructions
- Line your baking sheet with parchment or wax paper and set aside. In a large glass bowl, combine your corn syrup, sugar, and peanut butter. Cook on high heat for 2 minutes. Then cook for 30 seconds until your mixture is evenly combined.
- Pour your peanut butter mixture over your Rice Krispies. Mix until well blended. Mix in your chocolate chips quickly while the mixture is still hot. Stir until fully combined.
- Let that cool just a couple of minutes. Chop up your Reese's Candy Bars into chunks. Add them to your mixture and combine.
- Scoop out balls using a heaping Tablespoon. Place the balls onto your wax paper.
- Let them set about 15 minutes and serve.
