No Bake S'mores Cookie Dough Bites

These No Bake S'mores Cookie Dough Bites combine one of my favorite flavor combinations with my favorite cookie dough dessert! They're super easy to make in less than 15 minutes and they have 7 grams of protein per bite. The perfect sweet, healthy no bake treat any time of day!

Ingredients

  • 1/2 cup semisweet chocolate chips or dark chocolate chips
  • 1/4 cup oat flour 30g
  • 1/4 cup protein powder I used PEScience, vanilla, 31g
  • 3 Tbsp peanut butter 45g
  • 2 Tbsp brown sugar sweetener I used Truvia, 14g
  • 2 Tbsp maple syrup I used sugar-free pancake syrup
  • 1/8 tsp cinnamon
  • pinch salt
  • 6 Tbsp marshmallow creme fluff
  • 12 mini marshmallows optional for presentation

Instructions

  1. Line a muffin pan with 6 cupcake liners. 
  2. Melt the chocolate in the microwave. Add a little (about a 1/2 Tbsp) to the bottom of each cupcake liner. Tap the pan on the counter to help spread the chocolate across the bottom and use your spoon to bring it up the sides slightly. Place in the freezer for 5-10 mins to harden. 
  3. Meanwhile, make the cookie dough by mixing the oat flour through salt together. Roll into balls, flatten, and press on top of the hardened chocolate. 
  4. Add one tablespoon of marshmallow fluff to each cup (and 2 mini marshmallows if desired). Drizzle the remaining melted chocolate across the tops and place back in the freezer for at least 30 minutes to harden.

Notes

  • Recipe is gluten-free as written. Just make sure your oat flour are certified gluten-free.
  • To make vegan: You can make these S’mores Cookie Dough Bites vegan with a few substitutes. Swap out the protein powder for a vegan vanilla protein powder. And make sure your chocolate chips are dairy-free and vegan friendly. I love Enjoy Life!
