No Bake Strawberry Cheesecake Cups
Description
No Bake Strawberry Cheesecake Cups combine crushed graham crackers mixed with sliced nuts to form a crunchy foundation. The creamy filling is made by beating room-temperature cream cheese with Greek yogurt, powdered sugar, salt, and crushed freeze-dried berries, adding a tart berry flavor throughout. Fresh berries are pulsed with some crushed freeze-dried berries to retain some chunkiness and top the cups for added freshness and texture. The dessert is assembled in jars or cups by layering the crumb mixture, the creamy cheese filling, and then the chopped berry topping. This refrigerated dessert requires no baking and balances textures from crunchy to creamy to juicy.
The cheesecake cups provide a convenient dessert option served in individual portions, suitable to prepare ahead and chilled. The use of freeze-dried berries incorporated into the cream cheese mixture adds a subtle tartness and berry flavor without excess moisture. Fresh berries add a bright contrast.
For best results, use room temperature cream cheese to achieve a smooth filling. The quantity of graham cracker crumbs can be adjusted, and these cups can be served as a light dessert or snack. The crushed berries topping adds a visually appealing finish.
Ingredients
- 8 oz graham cracker crumbs (See Note 1)
- 1/4 cup nut sliced
- 2 cups fresh berries
- 1.25 oz freeze dried berries (See Note 2)
- 16 oz cream cheese (room temperature)
- 3/4 cup Greek yogurt
- 1/2 cup powdered sugar
- 1/2 tsp salt
Instructions
- Place the graham crackers in a plastic bag and press air out. Seal and using a rolling pin crush into crumbs. Add the sliced nuts and mix together. Set aside.
- Place the freeze dried berries in a plastic bag and press air out. Seal and using a rolling pin crush into crumbs, reserving 2 tablespoons for topping, and set aside.
- In a bowl add the cream cheese and beat for 3 minutes. Add the Greek yogurt and beat again to combine for 2 minutes. Add the salt, powdered sugar and freeze dried berries. Beat to incorporate and set aside.
- In a blender or food processor add the fresh berries and reserved 2 tablespoons of the powdered freeze dried berries. Pulse several times to chop and combine. I like to keep mine a little chunky and not completely puréed (optional).
- Assembly
- In eight 4 oz jars or four 8 oz cups divide half the graham cracker mixture on the bottom of each container. Divide the berry cream cheese mixture on top and top each with divided crushed berry mixture. Place a sliced berry on top and refrigerate.
Notes
- Use room temperature cream cheese to ensure a smooth and creamy filling.
- Choose your favorite nuts for the crumb base; sliced almonds work well.
- Chill assembled cups before serving to help the filling set.
- Freeze-dried berries add concentrated berry flavor without adding moisture.
- These cups serve well as portable single servings for parties or snacks.
