No Bean Turkey and Sweet Potato Chili
Description
This chili begins by browning lean ground turkey seasoned with kosher salt and cumin to develop a savory base. Onion and crushed garlic are added and briefly cooked until softened, contributing aromatic depth. Next, canned mild Rotel tomatoes with green chilies, tomato sauce, diced sweet potatoes, water, chili powder, paprika, salt, and a bay leaf create the flavorful cooking liquid. The pot is covered and simmered over medium-low heat until the sweet potatoes become tender, usually around 25 minutes, allowing all ingredients to meld. Alternatively, a pressure cooker can reduce cooking time to about 15 minutes with natural release.
The result is a thick chili with tender turkey pieces and hearty sweet potato cubes, enhanced by the warmth of the spices and mild heat from the Rotel. Unlike traditional chili, the absence of beans lends a smoother texture and highlights the meat and vegetable flavors distinctly. Cilantro garnish adds a fresh finish at serving.
This chili functions well as a substantial, gluten-free meal option suited for colder days or when a comforting bowl of chili is desired. It can be accompanied by simple cornbread or a side salad, according to preference.
