  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 14 ounce sweetened condensed milk
  • 1 cup diced strawberries
  • ½ cup white granulated sugar

Instructions

  1. In a small bowl, combine the strawberries and sugar until the fruit is evenly coated.
  2. Allow the mixture to sit for 15 minutes to give the strawberries time to reduce their juices.
  3. While the strawberries are sitting, use an electric hand mixer to whip the cream and vanilla for about 4 minutes on high speed, or until the mixture starts to form stiff peaks.
  4. Reduce the speed of your hand mixer to low and mix in the sweetened condensed milk and strawberry mixture until it is combined with the whipped cream.
  5. Transfer the ice cream mixture into a 9x5 inch bread loaf pan and tap the pan on the counter a few times to even the mixture out.
  6. Allow the ice cream to sit in the freezer for 5 hours covered with plastic wrap.
  7. Serve and enjoy!

Notes

  • When covered with plastic wrap or transferred to an airtight container, you can keep this ice cream in the freezer for up to a month. Depending on how cold your freezer is, your ice cream may take an extra hour or one less hour to freeze. When possible, I like to let my ice cream freeze overnight just to be safe.
  • Fresh strawberries will give you the most flavor, but you can also use frozen strawberries. For frozen strawberries, let the fruit thaw in the fridge before using.
  • For a chunkier ice cream, you can add an extra quarter cup of diced strawberries to your ice cream after it has been transferred to the loaf pan.
