No Cream Italian Herb Pasta - last minute side

This No Cream Italian Herb Pasta is a simple side dish highlighting long pasta coated in fragrant olive oil infused with dried Italian herbs and vegetable stock cubes. It achieves flavor without cream by using herbed oil and pasta cooking water to create a light, aromatic coating with a silky texture. It works well as a quick accompaniment to various main courses.

Description

No Cream Italian Herb Pasta uses a base of long pasta cooked al dente in salted water with the cooking time slightly shortened to retain a firm bite. Meanwhile, olive oil is gently heated with dried Italian herb blend to release their aroma before being combined with crumbled vegetable stock cubes, adding savory depth.

The pasta is drained but retains some starch on its surface, which, along with reserved pasta water, is added back along with the herbed oil mixture. Stirring over medium heat helps the water absorb into the pasta, creating a delicate sauce that clings to each strand, coating it evenly. The herbs and stock cubes provide a subtle but distinctive flavor punch without heaviness.

This pasta is versatile and can be served alongside grilled vegetables, seafood, or meat dishes. It offers a quick and flavorful alternative to butter or cream-based sauces, highlighting simple pantry ingredients with ease.
