No-Knead Cinnamon Rolls (So Easy)
Description
The dough for these No-Knead Cinnamon Rolls combines lukewarm water, instant yeast, salt, eggs, honey, melted butter, and flour, stirred to remove lumps. After mixing, the dough rests covered in the refrigerator from overnight up to four days, allowing the flavors and texture to mature without kneading.
When ready, the dough is rolled out into a rectangle, spread with melted butter, and sprinkled evenly with a cinnamon-sugar mixture. Rolled tightly into a spiral from the long side, it's sliced into twelve pieces, placed in a buttered pan, and rested before baking at 350°F. Baking takes about 35 to 40 minutes until golden.
The soft rolls are finished with a topping made from cream cheese, powdered sugar, and vanilla extract, providing a creamy sweetness that balances the spiced filling. This method offers an easy, low-effort way to enjoy classic cinnamon rolls with minimal hands-on time.
Ingredients
Dough
- 1 cup water lukewarm
- 1 tsp instant yeast
- 1/2 tsp salt
- 2 egg slightly beaten
- 1/4 cup honey
- 1/4 cup butter melted, unsalted
- 3 3/4 cups flour
Filling
- 4 tbsp butter unsalted
- 1 cup sugar
- 1 tbsp ground cinnamon
Topping
- 16 oz cream cheese
- 1 cup powdered sugar
- 1 tbsp vanilla extract
Instructions
- In a large bowl, whisk together all the ingredients except for the flour.
- Next, add in the flour and stir until you don't see any lumps of flour. The dough doesn't need to look perfect, as it will do it's magic while standing for 12 hours.
- Cover the dough with a towel and place it in the refrigerator overnight (or up to 4 days). The longer you let it sit in the refrigerator, the better tasting the dough will be.
- For the filling, combine the sugar and cinnamon together. Melt the butter in a separate jar.
- Dust the counter with flour and roll out the dough into a rectangular shape using a rolling pin.
- Spread the melted butter and then the cinnamon-sugar filling evenly on the surface of the dough. Starting with the long side, roll up the dough in a spiral.
- Flour the knife and cut the dough roll into 12 even pieces. Place the rolls onto a buttered baking pan, cover them with a towel, and let them rest for 1 hour. Preheat the oven to 350°F and bake the rolls for 35-40 minutes, or until golden brown.
- Combine the powdered sugar with the softened cream cheese and vanilla extract. Mix until the frosting is smooth and creamy.
- Spread the frosting over the cinnamon rolls and serve right away. Enjoy!
