Ingredients

  • 280 g plain flour (all purpose flour, 2 ¼ cup)
  • 1 cup Greek yogurt ( 250 ml)
  • ½ teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • oil for frying

Instructions

  1. In a large bowl, sift the flour, add the salt and bicarbonate of soda.
  2. Mix them well, then add the yogurt.
  3. Use your hands to gently form a dough, which is sticky at this point, then cover the dough with a foil, and leave to rest for 20 minutes.
  4. Divide the dough into 6 balls, and dust each ball generously with flour.
  5. Use a rolling pin to flatten each ball up.
  6. Heat up a non-stick frying pan on a medium heat, add about a half a teaspoon of oil, then cook the flatbreads on each side for 1-2 minutes, or until cooked.
  7. Serve hot or cold.

Notes

  • Allow the dough to rest for 20 minutes before shaping to improve texture and handling.
  • Avoid adding extra flour when the dough feels sticky initially; resting makes it easier to work with.
