Nut-Free Protein Bars

These Nut-Free Protein Bars blend rolled oats, oat flour, protein powder, and a sweetened coconut oil mixture to create dense, chewy bars without nuts. A drizzle of melted chocolate and a sprinkle of flaky salt add contrast to the mildly sweet, oat-forward flavor. The bars bake quickly and set firm as they cool, making a convenient snack option.

Description

The protein bars begin by combining rolled oats, oat flour, protein powder, and salt, forming a wholesome dry mix. The wet ingredients include melted coconut oil, maple syrup or honey, brown sugar, and vanilla extract, which are whisked and added to the dry mix. The mixture resembles cookie dough and is pressed into a parchment-lined loaf pan.

Baking at 350°F for 10–12 minutes allows the bars to puff slightly and edges to turn golden while setting their shape. Cooling is necessary for firm texture. The bars are then decorated with melted chocolate and flaky salt for added flavor and presentation.

The bars provide a protein-rich, nut-free option suitable for those with nut allergies or preferences. The chewiness and subtle sweetness can be adjusted by sweetener choice and optional chocolate chips included in the mix.

Ingredients

Servings
  • 1 ½ cups rolled oats gluten-free certified if needed, old-fashioned
  • ¼ cup oat flour spooned & leveled (homemade or store-bought)
  • cup protein powder (I use unflavored whey for best results)
  • ½ teaspoon salt
  • ¼ cup coconut oil melted
  • ¼ cup maple syrup or honey
  • 1 tablespoon brown sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • 2 - 4 tablespoon mini chocolate chips plus more for melting
  • salt flaky; optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan (approximately 8½ x 4½ x 2½ inches) with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, oat flour, protein powder, and salt.
  3. In a separate small bowl, whisk together the maple syrup or honey, brown sugar, melted coconut oil, and vanilla extract (it may not fully incorporate that is okay).
  4. Add this wet mixture to the dry mixture and toss until everything is incorporated and there are no dry bits left. NOTE: it should look and taste kind of like cookie dough.
  5. Press the dough evenly into the parchment-lined loaf pan.
  6. Bake for 10 - 12 minutes until the bars are puffed up, and the edges are lightly golden brown. NOTE: they might not look fully done when you take them out, but they will set as they cool.
  7. Once baked, remove the pan from the oven and allow the bars to cool to room temperature. Once the bars have cooled, drizzle them with additional melted chocolate and sprinkle a bit of flaky salt on top if desired.
  8. Enjoy!
