Nutella Stuffed Deep Dish Chocolate Chip Skillet Cookie (Pizookie)

This deep dish chocolate chip skillet cookie features a thick, buttery dough baked in a cast iron skillet, with a melted Nutella filling layered in the center. Its combination of gooey chocolate chips and rich hazelnut spread creates a dense and moist cookie suitable for sharing warm from the oven.

Description

The Nutella Stuffed Deep Dish Chocolate Chip Skillet Cookie starts with a classic cookie dough blended from butter, sugars, vanilla, egg, flour, baking soda, and salt. Half of the dough is pressed into a prepared cast iron skillet lined with parchment. Melted Nutella is then spread over this base dough layer before covering with the remaining cookie dough and topping with more chocolate chips.

Baking at 350°F delivers a cookie that is soft and gooey in the middle, with crisp edges from the skillet’s heat. Baking times can be adjusted to preference: 25-30 minutes for a gooey center or additional covered baking for a more set interior. Cooling briefly before serving allows the cookie to firm slightly but remains indulgently soft.

Warming the Nutella to a thinner consistency before spreading prevents tearing the dough and ensures an even filling layer. This dessert serves well warm straight from the skillet, offering a rich mix of chocolate and hazelnut flavors accompanied by a moist texture.

Ingredients

Servings
  • ½ cup butter softened
  • ½ cup light brown sugar lightly packed
  • cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 egg large
  • 1 cup flour all purpose or plain flour
  • ½ teaspoon baking soda
  • teaspoon salt
  • ½ cup dark chocolate chips or semi-sweet
  • ½ cup Nutella melted, or this Refined Sugar-Free Nutella Spread

Instructions

  1. Preheat oven to 350° F | 175°C. Line a 9" cast iron skillet (or pie dish) with baking/parchment paper and set aside.
  2. In a large bowl, whisk the butter, sugar and vanilla until light and creamy. Whisk in the egg until combined. Add the flour, baking soda and salt, and mix the dry ingredients into the wet until just combined. Fold in half of the chocolate chips and spoon ½ the cookie dough onto the prepared baking sheet.
  3. Melt the Nutella in the microwave for 30 seconds until it becomes thinner in consistency.
  4. Spread the Nutella over the cookie dough in the skillet evenly to 1-inch of the edges. Top with remaining cookie dough, smoothing the layer with the back of a metal spoon (and your fingers if you need to). Sprinkle with remaining chocolate chips.
  5. Bake in preheated oven for 25-30 minutes for a gooey cookie, or cover after 30 minutes with aluminium foil and bake for a further 10 minutes for a 'set' cookie. Cool for about 10 minutes before serving.

Notes

  • Warm the Nutella in a microwave for 30 to 60 seconds to thin it, making it easier to spread evenly on the dough.
  • Adjust baking times: 25-30 minutes yields a gooey center; add 10 minutes covered with foil for a more set cookie.
  • Let the cookie cool for about 10 minutes before serving to allow it to hold together while warm.
