Oatmeal Cake
Description
This cake begins with soaking rolled oats in boiling water until cooled, which softens the oats and adds moisture. The wet oats are combined with softened butter, light brown sugar, granulated sugar, eggs, vanilla, cinnamon, nutmeg, baking soda, salt, and all-purpose flour to form a spiced batter. Once baked at 350°F until set, the cake has a tender crumb with the distinct chewiness of oats.
The topping combines melted salted butter, milk, vanilla, light brown sugar, sweetened shredded coconut, and optional chopped pecans, which is spread over the warm cake. The cake is then broiled briefly on center rack to caramelize the topping, making it bubbly with toasted coconut and pecans adding crunch.
The resulting oatmeal cake offers a layered texture experience with a soft, spiced base and a vibrant toasted topping. It pairs well with coffee or tea and works as a comforting dessert or snack.
