Oatmeal Chocolate Chip Cake with Cream Cheese Frosting

This oatmeal chocolate chip cake features a batter made from oats soaked briefly with butter and boiling water, combined with a mix of sugars, eggs, and warm spices. Light brown sugar and cinnamon enrich the flavor, while milk chocolate chips add pockets of sweetness. The cake bakes to a tender crumb with a moist texture, complemented by an optional tangy cream cheese frosting for added richness.

Description

The Oatmeal Chocolate Chip Cake uses old-fashioned oats soaked with softened butter and boiling water to create a moist base that melds with eggs, granulated and brown sugars, salt, baking soda, baking powder, and cinnamon for warmth. Flour and chocolate chips are folded into this mixture, which is baked in a 9x13-inch pan until set but still moist. The oats contribute texture and body, while the chocolate chips provide sweet bursts throughout.

To finish, a cream cheese frosting made from softened butter, cream cheese, vanilla, and powdered sugar can be whipped to a smooth consistency and spread over the cooled cake for a creamy contrast to the crumb.

This cake serves well as a dessert or a sweet snack, marrying the heartiness of oats with classic chocolate and a creamy frosting layer. Baking temperature adjustments are suggested for different pan types to prevent overbaking.

Ingredients

Servings

Cake:

  • 1 cup old-fashioned oats
  • ½ cup butter cut into tablespoon-size pieces and softened to room temperature, salted
  • 1 ¼ cups water boiling
  • 2 egg large
  • ¾ cup granulated sugar
  • 1 ¼ cups light brown sugar or dark brown sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 ¾ cups all-purpose flour
  • 1 ¼ cups milk chocolate chips or semisweet or bittersweet

Cream Cheese Frosting (optional):

  • 4 tablespoons butter softened to room temperature
  • 4 ounces cream cheese softened to room temperature
  • ½ teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees F. Lightly grease a metal 9X13-inch baking pan with cooking spray (if using a glass or dark-coated pan, lower the baking temperature to 325 degrees F).
  2. In a medium bowl, add the oats and butter. Pour in the boiling water; stir, and set aside to cool for about 15-20 minutes (until it is just warm but not hot).
  3. In a large bowl, whisk together the eggs, granulated sugar, brown sugar, salt, baking soda, baking powder and cinnamon.
  4. Stir in the cooled oatmeal mixture until well-combined.
  5. Add the flour and chocolate chips (at the same time), and stir until just combined.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 30-40 minutes until the top springs back to the touch and a toothpick comes out with moist or no crumbs (don't overbake!).
  8. Let cool completely in the pan.
  9. For the cream cheese frosting, whip together (with a handheld electric mixer or a stand mixer fitted with the paddle attachment) the butter and cream cheese until smooth. Add the vanilla and powdered sugar, and mix until light and creamy, 2-3 minutes.
  10. Frost the cooled cake with cream cheese frosting or serve plain pieces of cake (slightly warm is divine) with a scoop of ice cream.
