Oatmeal Chocolate Chip Cookie Bars are thick, chewy and loaded with chocolate!

Ingredients
- 3/4 cup white whole wheat flour
- 1 1/4 cup rolled oats old fashioned
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/2 cup unsalted butter melted
- 1/2 cup dark brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- 3 ounces dark chocolate or 1/2 cup chocolate chips, chopped
- sea salt flaky, for sprinkling on top of the bars
Instructions
- Preheat oven to 350° F. Spray an 8x8 metal baking pan with cooking spray.
- In a bowl, whisk together the flour, oats, cinnamon, baking powder, baking soda, and salt. In a separate bowl whisk together the melted butter, sugars, egg and vanilla until smooth and well combined.
- Pour the wet ingredients in with the dry and stir together with a rubber spatula until combined. Fold in the chocolate. Dump the cookie dough into the prepared baking pan and use the rubber spatula or your hands to spread and press the dough evenly into the pan. Bake on the middle rack of the oven for 18-20 minutes. Let cool for at least 30 minutes before cutting.
