  • 2 ½ cups oats quick cooking
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cornstarch
  • 1 cup butter room temperature
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 egg
  • 2 teaspoons vanilla extract
  • 1 ¾ cups chocolate chips

Instructions

  1. Preheat oven to 375°F. Line cookie sheets with parchment paper.
  2. Whisk together oats, flour, baking soda, salt and cornstarch. Set aside.
  3. Cream together butter, brown sugar, white sugar and vanilla. Add eggs and beat until fluffy.
  4. Gradually add the oat mixture a little bit at a time until well mixed. Stir in chocolate chips.
  5. Drop by heaping tablespoons onto cookie sheets.
  6. Bake 10-12 minutes or until just lightly browned on the edges. Cool 2 minutes and transfer to a wire rack to cool completely.
